At this time, I don't want to run any risk going out for spinach.  So, I just used whatever we had.  The green colour will stand out more if more spinach were used.  Unfortunately, I only had this much Spinach. Characteristic of this bread:  The texture is especially soft, fluffy and moist on the first day and  second day it becomes slightly dry but, still soft. There is a very slight mild sourness. Happy Ester!  During this lockdown period eggs are limited.  So, I have been trying to minimise use of eggs in my baking where possible.  I tried to make Hot Cross Buns using the Yudane method and without eggs added except for a little bit of egg-wash.  This bread is very soft and delicious even without syrup glazing.  The traditional Hot Cross Buns usually has a syrup glazing but as usual, I try to make everything with less sugar. I’m not sure if its the blend of spices, the lightly sweet and sticky glaze, the orange zest or the combination of all three that really takes these over the top but man are they good. Based off of my White Bread Recipe, these rolls are soft, airy and unforgettable. What are Hot Cross Buns? Hot Cross Buns are a type of spiced...

I am back to my soft sourdough bread baking.  I have tried various types of soft sourdough bread and have not tried using wholemeal flour in my sourdough bread yet. Characteristic of this bread:  The texture is especially soft, fluffy and moist on the first day and it lasts very well for 2 - 3 days.  I think it is because of Yudane dough added.  It tastes very mild sourness. Yudane Method                               vs                       Without Yudane Method

It has been a while since I made white bread for my family.  I was experimenting with soft bread using the Yudane Method vs without Yudane Method.  For me personally, I still prefer to use the Yudane Method despite it requiring an extra step because the result is worth the little extra effort.   Characteristic of bread using Yudane Method:  The texture is especially soft, fluffy and moist on the first day and it lasts very well for 2 - 3 days.  There is a very slight mild sourness.   Characteristic of bread without Yudane Method:  The texture is soft, fluffy and...
