Josie’s Mac and Cheese

As promised here is my “famous” Mac and Cheese Recipe (it’s famous within my family and friends and not actually famous). This recipe is a FULL holiday serving. So these are the measurements you use when you have a whole army stopping by. If you want to make a normal sized dish just 1/2 everything and it all works the same. I usually make this for big dinners, or events. Or I make a big batch when my husband does his brisket cause then I do a left over bbq Mac and cheese I’ll have to tell you guys about.

Ingredients

  • Gluten free elbow macaroni (16 oz) x 2
  • Olive oil
  • Unsalted butter (12 tbsp)
  • Gluten free all purpose flour (2/3 cup)
  • Whole milk (6 cups)
  • Heavy whipping cream (2 cups)
  • Sharp cheddar cheese (4 cups) shredded
  • Colby jack cheese (4 cups) shredded
  • ****Gruyère Cheese (4 cups) shredded *******
  • Salt and pepper

**** do not skimp on this cheese, this is the most important part of the whole list, if you sub it, which you can if you must, just know it wont be the same. It’ll still be good with an appropriate substitute but just not as good as it could’ve been. ****

Topping ingredients

  • Gluten free pinko crumbs (3 cups)
  • Butter (8 tbsp) melted
  • Parmesan cheese (1 cup) shredded
  • Paprika (1/2 tsp)

Instructions

  • Preheat oven to 350F, prepare a huge pan or 2 4 qt baking dishes by lightly greasing it.
  • Shred your cheese and combine in large bowl
  • Cook your pasta according to package
  • Drain pasta and place in large bowl
  • Drizzle with olive oil and stir
  • In sauce pan, melt butter
  • Whisk in flour over medium heat
  • 1 cup at a time whisk in milk and heavy cream, whisk until nice and smooth. Add in salt and pepper and whisk few min
  • Whisk in 1 cup at a time the shredded cheese saving 4 cups
  • Stir in cooled pasta ** I actually mix mine in my giant foil pans I usually bake mine in
  • Pour half Mac and cheese into pan, top with remaining shredded cheese. Add remaining Mac and cheese
  • Small bowl combine pinko crumbs, Parmesan, melted butter and paprika then sprinkle over top
  • Bake for about 30 mins. It will be golden brown and bubbly
  • Serve and enjoy!
