Creamy Sun-Dried Tomato Pasta

Servings: 2


  • 1 and 1/2 cups penne pasta
  • 1 tbsp of sun-dried tomato oil
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, roughly chopped
  • 1/2 tsp chili flakes
  • 2/3 cup lite cream
  • 1/4 cup of flaked parmesan, plus extra to serve


  1. Bring a medium pot of water to a boil, and then add the pasta. Cook until just al dente then strain, reserving the pasta water.
  2. In a large fry pan, add the oil from the sun-dried tomato jar, and heat over a medium-high heat. Add the garlic, chili and chopped sun-dried tomatoes, and sizzle for 2 – 3 minutes until fragrant.
  3. Reduce the heat to a low-medium, and then add the cream. Heat slowly until just bubbling, and then simmer until thickened, about 5 – 7 minutes. Add the flaked parmesan and stir until melted, then season with salt and pepper.
  4. Add the cooked pasta into the sauce and toss to coat. Add some of the reserved pasta water to emulsify and allow to simmer for another minute. Serve with extra flaked parmesan, and enjoy!


For more tasty tomato flavour, add a tablespoon of tomato paste at step 3.
