Vodka Pasta

Vodka pasta you say. Yep it’s a cracker. The recipe featured in this month’s Delicious magazine and I can vouch for it!

  • 1 onion
  • 2 crushed garlic cloves
  • 3/4 cup tomato paste
  • 1/2 cup vodka
  • 1/4 cup thickened cream
  • 1/2 cup parmesan
  • 400g large pasta

Cook pasta in boiling water.

Cook onion and garlic for 5 minutes in some olive oil. Add tomato paste and cook for a further couple of minutes. Add vodka and cook off for 5 minutes.

Stir in cream, Parmesan and 1/4 cup of the pasta cooking water. Season, add pasta. Yum!
