Vegan Cloud Bread Pizza




  1. 200g egg whites
  2. 1/2 tsp xanathan gum
  3. .25 tsp ranch seasoning blend from Trader Joe’s
  4. 5g 1/3 less fat Philadelphia cream cheese
  5. 1/2 tsp Cream of tartar

Sauce and Toppings:

  1. 36g traditional pasta Sauce (no sugar added)
  2. 12g spinach
  3. 20g non-dairy mozzarella
  4. 60g mushrooms


  1. Add all crust ingredients (mix dry first) to a large mixing bowl
  2. Beat until it is a meringue consistency
  3. Spread it on parchment paper/a baking sheet and bake for 10 minutes
  4. Once done, add sauce and topping
  5. Baked for another 5 minutes
