I have two very close friends and occasionally we get together and head out for dinner. So one time last year we headed out for the much awaited dinner night. After much debating we once headed to one of the most happening places in town,Thyme
.I had already done my homework on the place and so choose the much talked about Valhomas Spagetti, or in english smoked tuna spagetti. It was pretty good and loaded with dried chillies that can cause you to sweat a little, or a lot. if you don't eat much chillies. I wanted to replicate the recipe , and after much tries, I came up with this recipe.
Serves 2 adults and 2 kids. Or 3 adults.

3 cloves garlic, thinly sliced
8-10 curry leaves
a good helping of dried chilli flakes ( or grind a 2-3 dried chillies ) depends on how hot you like.
250-300g tomatoes quartered
8-10 black olives, pitted
250g spagetti
150g valhomas ( I used the ones in Seagull Store) , thats Maldivian Smoked Tuna, thinly sliced
some lime juice
50g grated parmesan
First, place the tomatoes in a baking tray with a little olive oil and pinch of salt and place in a hot oven about 180 degrees C for about 30 - 45 minutes ( middle shelf) to roast. The tomatoes should colour a bit and go slightly soft. Remove and set aside.
Put a large pot of water with salt to cook the pasta, boil and add pasta and cook the pasta till done, drain , reserving 1/2 cup of the cooking water.
Heat about 3 tbsp of olive oil, add the valhomas and curry leaves and stir fry for 5 minutes, remove.

Add another tablespoon oil , if there isnt any in the pan, along with the garlic, and once it starts to soften and give its aroma, add the tomatoes, along with 1/3 cup water , simmer for 1-2 minutes. Return the valhomas and curry leaves, olives, chilli flakes and another 1/3 cup of the pasta cooking water. Cook 1-2 minute and add the Spagetti, toss to mix through , add a little of the cooking liquid if it looks dry. Switch off , and remove the pan from the heat.Stir in the cheese, and toss it through. Serve topped with some extra parmesan cheese.
Note: If you don't have parmesan, stir in 1-2 tsps of cream cheese spread before you add the spagetti, stir it through so it mixes into the sauce and then add the spagetti.
