This hearty, delicious, Traeger Homemade Ham and Cheese Scalloped Potato Casserole is one of our favorite way to use up any leftover ham we have from the holidays! An “all in one” meal, and endlessly customizable, you can change this up any way you’d like to suit your family’s tastes and preferences.
Traeger Ham and Cheese Scalloped Potato Casserole
This Ham and Cheese Scalloped Potato Casserole is one of my favorite ways to make something new out of all that leftover double-smoked ham. Creamy white sauce is poured over layers of thinly sliced potatoes and ham, and then topped with cheese. It is like a ham and cheese lasagna.
I like the ham sliced nice and thin and layered in with the potatoes. If you wanted to save time you could use bagged frozen hash browns for this and cubed ham. You would lose the layered effect, but the end result would be largely the same.
We served this with a big pile of steamed broccoli and some fresh bread.

How to make Ham and Scalloped Potato Casserole on the Traeger
This is just the overview so you can see what you’re actually getting into here. When you are cooking, you’ll want to use the full recipe at the bottom of the page.

Preheat
Fire up the pellet grill and preheat to 325°F.

Make the sauce
Don’t rush the roux. It is a lot of the flavor!

Assemble
Peel and prep the potatoes by thinly slicing with a mandoline (or a knife if you’ve got the skills).
Layer into your prepped baking dish along with the cheese and ham.

Bake it
Smoke it. Grill it. Whatever you want to call it, but put the casserole dish into the pellet grill (or oven) and let it cook.
It’ll take quite a while. How long exactly depends on how thick you cut your potatoes. An hour or so is within the realm of normal though. Cook until the potatoes are fork tender.

Enjoy
When you pull this off of the grill it is going to be molten lava hot. Let it cool for 10-15 minutes before slicing and serving.

Traeger Ham and Scalloped Potato Casserole
This cheesy scalloped potato recipe is made into a meal when you add delicious leftover ham to the mix!
Ingredients
- 1 stick butter
- 1/3 cup flour
- 4 cups whole milk
- 1/2 teaspoon mustard powder
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 4 cups shredded cheddar jack cheese
- 4 cups sliced ham
- 5 medium yellow potatoes, thinly sliced
Instructions
- Preheat your Traeger to 325°F.
- Melt your butter in a pan on the stovetop. Add flour and whisk in until lumps are gone. Continue stirring frequently while cooking over low heat until light golden brown. Add milk and seasonings and whisk. Heat over low heat, stirring frequently, until thickened.
- Peel and slice potatoes into thin, even ovals. Prepare a 10x13 inch grill-safe baking dish with baking spray. Layer potatoes, sauce, ham, and cheese. Repeat, and end the casserole with a layer of potatoes and cheese on top.
- Place the casserole in the pellet grill at 325 for 1 hour, or until the potatoes are fork tender and everything is melted and delicious.
- If the top starts to get too brown, cover loosely with tin foil.
