This dish was so delicious and itâs got a little bit of a kick to it which we loved! Super easy to make in a van you just need 2 hobs, 1 frying pan and 1 saucepan.
Ingredients
100g Chorizo
1/2 Tea spoon Chilli flakes
35g Italian hard cheese
1 Vegetable stock cube
160g Pasta
175g Baby plum tomatoes
2 Garlic cloves
1 Lemon
10g Parsley
Method
- Chop up the Chorizo into bitesize chunks.
- Chop up the Onions and Garlic.
- Grate the Hard Cheese.
- Cut the Lemon into wedges.
- Chop up the Parsley
- Place Pasta and Water into a saucepan, bring to the boil and cook for 12 minutes.
- Whilst the pasta is cooking add the Chorizo, Onions and Garlic into a frying pan and cook on a medium heat for 2 minutes.
- Add to the frying pan Tomatoes (either whole or chopped in half), Chilli Flakes, Vegetable Stock Cube and a splash of the pasta water.
- Once the Pasta is cooked drain and add the pasta into the frying pan, give it a stir to mix all the flavours together and youâre ready to serve!
- Just add parsley, lemon wedges and grated hard cheese when plated up đ
