I don’t know about you but I’m all about skillet meals. Anything that I can make in once skillet and then pop into the oven is a winner in my book….especially if it’s loaded with meat. My guys are definitely carnivores so this roast beef meal is right up their alley.

- Yellow onion
- Olive oil
- Barbecue sauce
- Mexican corn with peppers
- Diced tomatoes with green chilies
- Barbecue seasoning blend
- Granulated garlic
- Ground cumin
- Shredded cheddar cheese
- Tater tots
- Green onions
HOW TO MAKE SHREDDED BEEF TATER TOT CASSEROLE

Preheat the oven to 400°F.
In a large heavy-duty skillet over medium high heat, add a swish of olive oil. When the oil is nicely hot, add the shredded roast beef, cooking it until just browned and a bit crispy, 3-4 minutes.
To the beef, add the barbecue sauce, corn, tomatoes, barbecue seasoning, garlic, and cumin. Mix well, and simmer over medium heat for 5 minutes; sprinkle with 1 cup of shredded cheese. Arrange the tater tots on top.
Bake for 25 minutes until the tater tots are crispy and golden brown. Sprinkle with the remaining cup of shredded cheese during the last 5 minutes of baking time.
Garnish with a drizzle of bbq sauce and chopped green onions and serve at once.
TIPS FOR MAKING THIS CASSEROLE THE BEST IT CAN BE
- Make sure the tater tots are nice and golden brown before removing from the casserole from the oven so they have a crispy exterior.
- Use other types of fully cooked meat in place of the roast beef, if desired. Pulled pork or cooked rotisserie chicken would also be delicious in this recipe.

My favorite type of heavy-duty skillet is a Lodge 12-inch cast iron skillet. I use mine all the time! It’s great for stove top cooking as well as in the oven for a skillet meal like this one. I love how cast iron really holds the heat so it can give superior browning to meat – this adds tons of flavor!
Wooden cutting board – for slicing the roast beef, it’s nice to have a large cutting board that has a channel around the edge on one side. The channel is where the juices from the meat can gather, keeping them from running off the cutting board and making a mess.
Chef’s knife – I use my stainless steel Wusthof chef’s knife for slicing meat, but some cooks prefer a good carving knife since the blade is more narrow.
**When purchasing good quality knives, know that it’s a great kitchen investment if taken care of properly, good knives are a lifetime purchase. I know it seems like a lot of cash upfront, but it sure pays off quickly, and you’ll enjoy prep work a whole lot more if you’ve got a good knife in your hands.
