Our schedule has picked up a bit now that we’ve added in horseback riding and circus school, but it’s no where as busy as life was pre-pandemic. I don’t know how I used to do all the running I used to do. So, I was looking for simple meals, and I found them. Here’s our meal prep & menu plan for May 31 2021:

Dinner–Pasta e Fagioli with Chickpeas, homemade garlic bread with Trader Joe’s GF bread
Tuesday
Lunch–Texas Tacos, lettuce, tomatoes
Dinner–Tater Tot Hot Dish, salad
Wednesday
Lunch–Chicken Pot Pie,
Dinner–leftovers & seafood patties, rolls
Thursday
Lunch–leftover Pasta e Fagioli with Chickpeas, Chicken Apple Sausage
Dinner–Lemon Pepper Chicken sheet pan meal
Friday
Lunch–Taquitos, Salad
Dinner–Egg Quesadillas, hash browns, clementine
