A vibrant and delicious Italian pasta salad is the perfect summer side dish! This recipe by Clean & Delicious is packed with vegetables and coated with this amazing homemade dressing that is full of flavors. It’s super easy to make – ready in just 20 minutes. Ingredients:
- 1 box (16 oz) fusilli pasta (you can choose whatever pasta you prefer)
- 1/2 cup of extra virgin olive oil
- 1/3 cup of red wine vinegar
- 2 cloves of garlic (crushed)
- 1 teaspoon of Dijon mustard
- 1 teaspoon of Italian seasoning
- 1 teaspoon of sea salt
- 1/2 teaspoon of black pepper
- 1 (14-oz) can of quartered artichoke hearts (drained)
- 1/2 cup kalamata olives (cut in half)
- 1 1/2 cups of bell pepper (diced)
- 1 cup of baby tomatoes
- 1/2 cup of celery
- 1/2 red onion
- 1/2 cup of chopped fresh basil
Instructions:
Step 1:
Boil a pot filled with water and cook the pasta based on package instructions until al dente.
Step 2:
While the pasta is cooking, make the dressing. In a large bowl, combine 1/3 cup of extra virgin olive oil, 1/3 cup of red wine vinegar, 2 cloves of crushed garlic, 1 teaspoon of Dijon mustard, 1 teaspoon of Italian seasoning, 1 teaspoon of sea salt, and 1/2 teaspoon of black pepper. Whisk until well combined.
Step 3:
Once the pasta is cooked, drain it and transfer right into the dressing. Toss everything to coat the pasta. Set it aside and let it cool, tossing once or twice so the pasta can absorb all the wonderful flavors of the dressing.
Step 4:
Add the quartered artichoke hearts, olives, bell pepper, tomatoes, celery, onion, and basil into the pasta. Mix until well combined.
Step 5:
Serve and enjoy. You can also chill it until it’s ready to serve.
