The best part is that the prep is so minimal, you’ll feel like you’re cheating as the flavours it produces are SO insanely good for such little effort! For under £1.15 per portion, you and your family/friends will be drooling over this easy, delicious and hassle free Slow Cooker Sausage Casserole.
Recipe Difficulty – Very Easy
Although we seem to be heading into Spring shortly (fingers crossed!), the days still seem to be pretty chilly at the moment and I’m definitely not in the mood for cold salads come lunch time or dinner time yet. This Slow Cooker Sausage Casserole is just what I fancy! It is super warming and filling and is perfect for when the weather is bleak outside and you fancy something comforting. I’m a huge fan of slow cooker recipes at the moment (especially when they are bursting with flavour!). They’re a great win for when time is limited, but you want something wholesome, nutritious and filling. As you can imagine, time isn’t really on my side at the moment with my 4 month old daughter, so I’ve been using my slow cooker more and more recently! Thus this amazing veggie Slow Cooker Sausage Casserole was born! Served with some quick and easy Chickpea Flat Bread to really mop up the sauce, you’ve got a seriously hearty meal on your hands which took no effort at all!

- Chopped tomatoes – these provide a great base for the Slow Cooker Sausage Casserole, they provide an acidity which adds depth of flavour and also adds the perfect amount of liquid for the casserole
- Black beans – these are a great plant-based protein and add the perfect texture for the meat free casserole
- Chickpeas – are also a great protein and pair really well with the black beans for the sausage and bean casserole.
- Onion – I’ve used a white onion in this recipe, however you could use a red onion if you preferred
- Garlic – adding garlic offers a gentle spice and adds more flavour
- Vegetable stock – adds to the general flavour as well as adding body and depth to the recipe
- Sausages – I’ve used veggie sausages to keep make this a vegetarian casserole, however if you aren’t vegan or veggies you could use meat sausages
- Red pepper – This adds some veggies and compliments the flavours. You could use a green or yellow pepper as a substitute
- Cumin – I love cumin! This is a rich and hearty spice and really enhances the flavour
- Paprika – this spice provides a round, woody, smokey flavour that really takes this veggie casserole to the next level!
- Ground coriander – a fresh tasting spice, that is floral and citrusy
- Chilli powder – this adds a subtly heat to the Slow Cooker Sausage Casserole, but don’t worry it isn’t too overbearing!

How to make Slow Cooker Sausage Casserole
Firstly finely dice the onion, roughly cube the pepper, dice the garlic and chop the sausages into 1 inch chunks
Add all of the ingredients into the slow cooker and cook on high for 3.5 hours or low for 7 hours
Substitutions
- Pepper – I’ve used a red pepper in this sausage casserole with vegetables, however a green or yellow pepper would also work. You could also add in any other vegetables that need using up, sometimes I add mushrooms or courgettes!
- Beans – Feel free to substitute the chickpeas or black beans to an alternative of your choice e.g. cannelloni beans. You could even create a Sausage and Baked Bean casserole if you wished!
- Sausages – I’ve used vegetarian sausages in this recipe to keep it meat free. However, you could use meat sausages if you preferred.
- Spices – if you don’t have access to all of the spices, don’t worry too much, the flavours would still be there from the stock and other remaining ingredients! However, with all the spices in tow, they really do take the veggie casserole to the next level!
Variations
- Spicy – This is a mild recipe so that everyone can enjoy it. If you are cooking for someone who is particularly sensitive to spice, feel free to remove the chilli powder. Equally if you wanted to up the heat in this Slow Cooker Sausage Casserole then you can increase this quantity of chilli powder or add some cayenne pepper. You could even add some freshly chopped chillis on top of the veggie casserole. - Deluxe – If you are having dinner guests, this is the perfect hassle free recipe. You can simply forget about dinner whilst enjoying the company of your guests. If you wanted to take this veggie sausage casserole to the next level you could serve it with some Herb Salted Hassel Back Potatoes. Honestly, these Slow Cooker Sausage and Potatoes will totally impress your guests! You could serve it with some brown rice or quinoa and top it with some freshly chopped parsley. - Kid friendly – This is a great recipe to get the children involved in. It is simple and easy for them to follow and they’ll love checking on the slow cooker whilst it’s simmering away. Leftovers
This is a great recipe of meal prep! Store any cooled leftovers in an airtight container in your fridge for up to 3 days, or for up to 3 months in a freezer. You could also portion servings out into individual containers for meal-prep ahead of a busy week. If cooking from frozen, allow to defrost fully, before gently reheating on the hob until piping hot.

Any sausages will work for this! I’m personally meat free so choose a vegan sausage but you could easily using a pork or chicken sausage in this recipe!
Yes definitely, simply fry off the onions and garlic in olive oil over a low heat until soft. Then add the remaining ingredients and simmer for approximately 30-45 minutes.
I serve my Slow Cooker Sausage Casserole with brown rice or quinoa. You could also add some freshly chopped parsley if you wanted to make it look extra bouji.
