Creamy Winer Walnut Pasta

This Creamy Winter Walnut Pasta takes basics such as mushroom, cream, and garlic and adds a bit of pizzazz with mascarpone, walnuts and parmesan. And a few easy, hearty sides to round it out – asparagus tips, garlic bread and salad. It was fun to try to create a tasty meal, easily scalable for a larger party within a reasonable budget. Cooking at home and including your veg doesn’t have to come at a large hit to your wallet!
Recipe for two:
- Chop one packet of mushrooms
- Sauté two cloves of garlic with 2 tbsp of olive oil (no need to chop!)
- Add chopped mushroom and cook for a few minutes until cooked through
- Grate 1/4 cup of parmesan
- Add cooked mushroom, parmesan, 1/3cup of walnut, 1/3 cup of mascarpone, and 2 tbsp of single cream to blender
- Boil 250g (1/2 bag) pasta in salted water
- Add sauce to the pan, and let cook a bit. Add a bit of pasta water to thin and a pinch of pepper
- Add the cooked pasta to the sauce
- Top with some parsley and chopped walnuts when serving for extra crunch!
Grab a nice refreshing glass of white wine to help complement the hearty flavours. For sides, I made grilled asparagus with olive oil, sea salt and pepper. And some garlic bread ciabatta pieces for easy handling! Not pictured were my attempt at smashed Brussels sprouts but will be for another day and salad with croutons and parmesan.
