Chicken Chow Mein

Ingredients:

  • Coconut oil (as needed)
  • About 2 tablespoons of sesame seed oil
  • 28 ounces of fettuccine pasta
  • 1.5-2 pounds of chicken pieces
  • 4 large carrots sliced
  • 4 celery sticks sliced
  • 1/2 of a cabbage sliced
  • 1 broccoli bunch cut into bite size pieces
  • 1 bunch of green onions
  • 2 teaspoons of fresh ginger
  • 3-4 garlic cloves
  • 1 cup of soy sauce
  • 2 tablespoons of rice vinegar
  • 1 cup of hot water
  • 2 teaspoons of chicken better than bouillon
  • 1 cup of cool water
  • 5 tablespoons of cornstarch

Directions:

  • Bake chicken at 350 degrees for about an hour. When cooked, chop it up into bite size pieces and put it aside for a while.
  • Add pasta to a large pot of boiling water and cook until done, stirring occasionally to make sure it doesn’t stick.
  • Chop all of the carrots, celery, cabbage, and broccoli and place in a bowl until ready to cook.
  • Place the 1 bunch of green onions, garlic, and ginger in a chopper and make sure it’s thoroughly mixed. Then place it into a large pot over medium heat with a spoonful of coconut oil and about a tablespoon of sesame seed oil.
  • When green onions, garlic, and ginger begins to smell good then add all of the vegetables to the pot and stir around about 1/2 cups worth of coconut oil and another 2 tablespoons of sesame seed oil to keep things moist and flavorful. Place the lid on and check it about ever 7-10 minutes until vegetables are cooked.
  • While the vegetables are cooking, prepare the sauce. In a measuring bowl combine the soy sauce, hot water, chicken better than bouillon, rice vinegar, and honey.
  • Once vegetables are cooked, pour the sauce and add the chicken into the pot. Mix it together and let it heat up to a boil.
  • Take another measuring bowl and stir the cool water and cornstarch together.
  • Once the sauce is boiling in the pot, pour the cornstarch mixture in the center while stirring it all together in the pot simultaneously.
  • Let the sauce and vegetables cook for about another 5-10 minutes so to heat it up again, then let it sit with the lid on top for a few minutes.
  • Stir the pasta into the sauce and vegetable mix and grab your chop sticks to enjoy!
