Pesto Pasta Bowl
As we are nearing the end of the third week of 2020 and I have some catching up to do, I shall follow yesterdays post with this meal B2. I refer not to one half of the bananas in pyjamas, but instead to bowl 2, the second creation in the project that is 52 bowls.
One of lifes widely known truths is that pesto pairs perfectly with pasta. Delicious and distinctive. This time we made our own the life of our basil plant sacrificed in the process. No regrets though.
-Pasta of choice
-Pesto: fresh basil (1 cup), roasted cashews (1 cup), olive oil (1/4 cup), lemon juice (2 T), crushed garlic (2 cloves)
-Cherry tomatoes (halved)
-Thinly sliced red onion
-Protein source: flaked tuna (his) + fried tempeh (hers)
-Cracked pepper to serve
Blitz pesto ingredients. Stir into freshly cooked pasta. Assemble.
